Linzer Stars with Jam

Ingredients

350 g Wheat flour, white, multi-purpose

100 g Nuts, almonds

1 pinch Salt, table

120 g Sugar, white

1 bag Sugar, white

1 pinch Spices, cinnamon, ground

200 g Butter, unsalted

3 pieces Egg, egg yolk, fresh

120 g Marmalade, orange

Steps

In a bowl, sift the flour and mix it with ground almonds, sugar, salt, lemon zest, and cinnamon. Add pieces of butter to the mixture. Quickly rub the fat into the dry ingredients with your fingertips, lifting the mixture to create a crumbly texture. Add the egg yolks and quickly knead the ingredients into a shortcrust dough. Shape it into a ball, wrap it in plastic wrap, and refrigerate for 40 minutes.

Preheat the oven to 180 degrees Celsius. Line a low baking tray with parchment paper. Take the dough out of the refrigerator and roll it out on a lightly floured surface to about 3 mm thickness. Use a cookie cutter to cut out star shapes. For half of the cookies, use a smaller cutter to cut out a star or other shape (e.g., heart, flower) in the center.

Place the cookies on the prepared baking tray. Bake in the preheated oven for 8 to 12 minutes. When they turn lightly golden brown on top, remove them from the oven, carefully transfer them to a cooling rack, and let them cool.

Spoon jam onto the center of the cookies without holes, then cover them with the cookies that have holes (see picture). Dust the prepared cookies with powdered sugar, arrange them on a plate or tray, and serve.
