Steps
-
Prepare the molds. If you don't have any, you can use aluminum foil to make small round cups of the desired size. Grease the lollipop molds. Line a large, shallow baking tray with parchment paper and place the molds on it, in which you will prepare the lollipops.
-
In a small pot, add sugar, 1/2 cup of water, maple syrup, and corn syrup. Mix well. Place the pot on high heat and bring the mixture to a boil. Cook until the mixture reaches a temperature of 145 °C. Then add the food coloring and fruit flavor extract. Check the taste: dip a spoon into the mixture, then dip it into cold water. Taste it. If necessary, adjust the flavor by adding more extract.
-
Continue cooking until the mixture reaches a temperature of 150 °C. Pour the mixture into the molds. Add wooden or plastic sticks. Wait for the lollipops to cool and harden completely, which takes about 15 minutes.
-
Remove the hardened lollipops from the molds and place them in a tall glass. Serve.

Advice
WARNING: Preparing lollipops requires a lot of attention and care. The hot sugar mixture can cause severe burns. Its best if the lollipops are colored differently: yellow, red, green. For this purpose, we need to prepare 3 mixtures, each colored with a different food coloring.
