London Slices
Whether its a celebration, a party, or a lazy Sunday afternoon, you cant go wrong with this simple pastry made from shortcrust pastry, jam, and a juicy walnut filling. Known as London slices, this pastry pairs perfectly with a cup of warm drink, and during more festive occasions, you can even enjoy a glass of sweet wine alongside it.

200 g Butter, unsalted

4 pieces Egg, egg yolk, fresh

100 g Powdered sugar

300 g Wheat flour, white, multi-purpose

0.5 bags Baking powder

In a bowl, add softened butter, powdered sugar, salt, and egg yolks. Mix everything together with a mixer until frothy. Add flour and baking powder, then quickly knead the ingredients into a compact dough. Shape it into a ball, wrap it in plastic wrap, and refrigerate for one hour.

Line a baking tray (approximately 25 x 40 cm) with parchment paper and preheat the oven to 160°C. Roll out the dough on a lightly floured surface to about 1 cm thick, then transfer it to the baking tray using a rolling pin. The dough should only cover the bottom of the tray, so trim any excess dough and use it to fill any gaps at the corners or edges. Place the tray in the preheated oven for 10 minutes to partially bake the dough.

Beat the egg whites into stiff peaks, gradually adding sugar. Gently fold the ground walnuts into the beaten egg whites. First, spread the dough with jam, then evenly spread the walnut filling on top, smoothing it out.

Bake the pastry in the preheated oven for about 15 more minutes. Let it cool completely before slicing.
