Ingredients

500 g Flour, Wheat, bread flour

0.25 bags Baking powder

200 g Butter, unsalted

120 g Sugar, white

Sift the flour into a bowl and mix it with sifted baking powder. Add the eggs, thinly sliced softened butter, sugar, and lemon zest. Knead the ingredients by hand into a soft but compact dough, which should rest in a cool place for at least 15 minutes.

Preheat the oven to 180 degrees Celsius. Line a low baking tray with parchment paper and attach the cookie cutter to the machine. Take a piece of dough and use the machine to extrude it into a long strip onto a lightly moistened work surface. Cut it into equally long cookies and place them on the prepared baking tray. Repeat the process until all the dough is used. Bake the cookies in the preheated oven for 10 to 15 minutes, or until they turn lightly golden brown.

Transfer the baked cookies to a wire rack and let them cool completely. Once cooled, store them in an airtight cookie box or serve them with a cup of your favorite warm beverage.
