Magical Chocolate Cake
Magical or enchanting cake is truly something special. The preparation is quick and childishly easy, as you only need to mix all the ingredients together and pour them into a baking dish. The batter separates into distinct layers during baking: a juicy and creamy bottom layer reminiscent of pudding, and a soft and fluffy top layer similar to sponge cake. This is undoubtedly one of those desserts where minimal effort yields maximum enjoyment.

Ingredients

150 g Sugar, white

115 g Butter, unsalted

45 g chocolate, dark

115 g Flour, Wheat, bread flour

Steps

Preheat the oven to 160 degrees Celsius. Lightly grease a deep baking dish (approximately 20 x 20 centimeters) with butter and line it with baking paper.

Melt the butter and chocolate over a double boiler. Stir the melted ingredients until well combined, then let the mixture cool to lukewarm. Warm the milk to lukewarm. Sift the flour, salt, and cocoa powder into a bowl. Mix the sifted ingredients well.

Beat the egg whites with an electric mixer until stiff and glossy peaks form. Stop beating when the peaks are firm but the meringue is not so stiff that it starts to break.

Add sugar to the egg yolks and mix until you get a thick, pale yellow mixture. Add the vanilla extract, coffee, and the chocolate-butter mixture, and mix until well combined. Then, fold in the sifted flour mixed with cocoa powder, and finally, the lukewarm milk. Mix until you get a completely smooth batter without lumps, then gently and slowly fold in the beaten egg whites with a hand whisk. Pour the prepared batter into the baking dish.

Bake the cake in the preheated oven for 50 to 60 minutes, or until the top is nicely browned. When you gently shake the baking dish, the mixture should still slightly wobble.

Let the cake cool completely before serving, then cut it into pieces of your desired size. Serve on plates, dust with powdered sugar, and accompany with whipped cream and fresh fruit.
