Magical Lemon Cake
A moist cake with a delicate, refreshing lemon flavor. Its magical because one batter forms three layers with three different textures during baking. At the bottom is a creamy layer, in the middle a sponge cake, and both are topped with a slightly crispy crust.

Ingredients

125 g Butter, unsalted

115 g Wheat flour, white, multi-purpose

4.2 dl Milk, whole milk

Steps

Preheat the oven to 160°C (320°F). Grease a baking dish measuring 25 x 20 cm. Melt the butter and let it cool.

Separate the egg yolks from the whites. Beat the egg whites into stiff peaks, and whisk the yolks together with sugar and vanilla sugar until the mixture doubles in volume.

Mix the melted and cooled butter into the beaten yolks, then add the flour, and finally the lemon zest and lemon juice. Gradually pour in lukewarm milk while mixing.

Gently fold the beaten egg whites into the lemon batter in thirds using a spatula.

Pour the mixture into the prepared baking dish and bake in the preheated oven for 50-55 minutes, until the top is nicely golden. Once cooled, dust with powdered sugar.
