Mango Cream with Caramel Crust

Ingredients

2 piece Mango, fresh

250 g Cheese, creamy

200 g Yogurt, plain, from whole milk

1 teaspoon Spices, ginger, ground

1 piece Lime, fresh

10 spoon Sugar, brown

Wash the lime, dry it, and grate the zest. Cut it in half and squeeze out the juice. Wash the mango and cut it lengthwise around the pit, then remove the flesh from the skin. Dice the flesh into small cubes and distribute them into four ramekins.

In a bowl, mix the mascarpone with yogurt. Add ginger, lime zest, lime juice, and 2 tablespoons of sugar. Pour the mixture over the mango and smooth the top. Place the ramekins in the refrigerator for 2 hours to chill thoroughly.

Take the ramekins out of the refrigerator and evenly sprinkle 2 tablespoons of sugar over the top of each ramekin. Preheat the oven to the highest temperature and place the ramekins on the top rack for 2 to 3 minutes. Wait for the sugar to melt and form a crispy brown crust. Let the ramekins with mango cream cool slightly, then place them in the refrigerator for half an hour. Serve the chilled dessert to your guests.

Advice
You can also caramelize the sugar using a torch. This way, you wont need to place the dessert in the oven and then let it cool.
