Ingredients
Dough

200 g Wheat flour, white, multi-purpose

2 pinch Salt, table

2 piece Egg, fresh

3 spoons Water

250 g Meat, lamb, fillet

1 piece Onion, raw

5 twig Parsley, fresh

450 ml Soup base, beef, cube

3 pods Garlic, fresh

300 ml Yogurt, plain, from skimmed milk

50 g Butter, unsalted

1 teaspoon Spices, paprika

0.25 teaspoons Mint, dried

Pour the flour onto a clean work surface, salt it, and make a well in the center. Crack the eggs into the well. With wet fingertips, start kneading from the center, gradually incorporating the flour with the eggs. Add water and knead for about 10 minutes until you get a smooth and elastic dough. Shape the dough into a ball, cover it with a cloth, and let it rest for half an hour in a dry and cool place.

Peel the onion and wash and dry the parsley. Finely chop both ingredients. In a separate bowl, thoroughly knead the meat, onion, and parsley. Roll out the dough thinly on a floured surface and cut it into 5 cm squares. Place a spoonful of filling in the center of each square and slightly moisten the edges with your fingers.

Shape the manti. Fold the opposite corners diagonally over the filling and pinch them together at the top. Do the same with the other two corners. It's important to seal the manti well at the seams so they don't fall apart during baking. Preheat the oven to 200 degrees Celsius. Prepare a deep baking dish and grease it well. Arrange the prepared manti in a single layer in the dish, then bake for about 25 minutes.

Place a pot on the stove, pour in the broth, and heat it well. Pour the heated broth over the manti, cover the dish with aluminum foil, and bake for an additional 15 minutes.

Peel the garlic and crush it in a mortar with salt. Mix the crushed garlic with yogurt. Place a pan on the stove, melt the butter, and mix it with dried mint and ground paprika.

Serve the prepared manti in deep bowls, drizzle with garlic yogurt, and top with the spiced melted butter. Serve the dish.
