200 g Butter, unsalted

Steps

Grease the bundt pan with butter and dust it with flour. Cream the soft butter or margarine until fluffy. Wash the lemon and grate half of its zest into the bowl with the butter. Add 200 g of sugar and mix thoroughly. Gradually add the eggs while continuously mixing.

Sift the flour and baking powder and alternately add them to the fluffy mixture with the milk.

Preheat the oven to 200 °C. Pour half of the batter into the greased pan. Add cocoa and 40 g of sugar to the other half of the batter and mix well. Pour the dark batter over the light batter. Use a fork to swirl the batter and create a pattern.

Bake the cake for 60 to 70 minutes in the preheated oven. Once baked, invert the cake onto a wire rack, let it cool, and dust it with powdered sugar.

Advice
Before using, keep the butter at room temperature for a few hours, as it will be easier to mix. Use only the zest of organically grown citrus fruits. Waxes and pesticides used on conventionally grown southern fruits cannot be removed by washing with water. If you dont have a bundt pan, you can also bake the cake in a regular baking dish. The baking time will be shorter because the layer of dough will be thinner. If desired, you can beat egg whites into stiff peaks and fold them into the dough. This will make the dough even lighter. It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax containing toxins.
