Marble Cake with Lime

Ingredients
Biscuit

Dressing

70 g Powdered sugar

Syrup

100 g Powdered sugar

50 ml Juice, lime

50 ml Alcohol, Rum
Steps

Add butter to a cup and slowly melt it over low heat. Beat eggs, sugar, and vanilla sugar until frothy. Once the mixture doubles in volume, mix in the oil, sweet cream, lime zest, and melted butter.

Sift the flour and baking powder and gently fold into the egg mixture. Set aside four tablespoons of the batter and mix in cocoa powder.

Pour half of the light batter into a narrow, elongated baking pan and spoon the dark batter on top. Cover with the remaining light batter.

Use the handle of a spoon or a skewer to swirl the batter in the pan, creating a marbled pattern.

Place the pan in the oven preheated to 170°C (340°F) for about 50 minutes. Check if the cake is done by inserting a toothpick or wooden skewer. If no batter sticks to it, remove the cake from the oven.

In a cup, combine lime juice and sugar, and optionally add rum. Bring to a boil, then remove from heat and let it cool.

Once the cake has cooled to lukewarm, poke holes in it with a wooden skewer and pour the cooled syrup over it. Let it cool completely and allow the syrup to fully absorb.

In a small bowl, mix powdered sugar and lime juice to create a medium-thick glaze, which you can use to decorate the cooled cake as desired. Garnish with fresh raspberries, mint leaves, slices of fresh lime, etc.
