Steps

Marinated Bananas: Cut the fruits in half and squeeze out the juice, which you pour into a cup. Add cloves, honey, cinnamon stick, and anise, then heat everything together. Strain the hot liquid. Peel the bananas, cut them into thirds, and pour the strained liquid over them.

Chocolate Mousse: Separate the egg whites and yolks into two bowls. Add a few tablespoons of sugar and liqueur to the yolks and whisk until frothy. Beat the egg whites with the remaining sugar into stiff peaks. Melt the chocolate over a double boiler and mix in the butter. Wait for the chocolate to cool, then first fold in the yolks, followed by the beaten egg whites. Cover the mousse container and refrigerate until well chilled.

Chocolate Crumble: Melt the chocolate with butter over steam and let it cool slightly. Add all the remaining ingredients and mix until combined into a uniform mixture. Spread it evenly on a baking tray lined with parchment paper. Bake in a preheated oven at 180°C for 10 minutes. Remove the baked dough from the oven and quickly crumble it. Let it cool completely, then grind it into small pieces using an electric mixer.

Yogurt Parfait: Soak the gelatin in cold water. In a bowl, mix yogurt, sour cream, honey, sweet cream, and egg whites using a hand mixer. Place the bowl over a double boiler and wait until the mixture warms to lukewarm, then mix in the soaked gelatin. Mix everything well again with the hand mixer. Pour the mixture into a siphon and dispense it into a bowl. Cover with plastic wrap and refrigerate until well chilled.

Mango Cream: Add mango puree, orange juice, mint leaves, and honey to a cup. Mix the ingredients well, heat, and strain.
