Marinade

675 g Meat, beef, fillet - lung roast

200 g Beans, in pod, fresh

2.5 spoons Soy sauce, shoyu

2 spoons Alcohol, Dessert wine

Steps

Clean the beef fillet, wash it, and thoroughly dry it with paper towels. Cut it into thin strips. In a large bowl, prepare a marinade from soy sauce, cornstarch, water, oil, sherry, and sugar. Mix the ingredients well with a hand whisk to get a smooth mixture. Add the meat strips and mix everything well. Cover the bowl and let the meat marinate for 30 minutes.

Peel the carrots, wash them, and cut them into short sticks. Clean and wash the sugar snap peas. Peel and finely chop the garlic. Peel and grate the ginger.

Place a wok on the stove and heat it well. Add two tablespoons of oil, wait for it to heat up, then add the marinated meat strips and stir-fry them for 2 to 3 minutes. Remove the stir-fried meat from the wok and transfer it to a plate.

Heat the remaining oil in the wok and quickly stir-fry the carrots and sugar snap peas. Add the garlic and ginger and stir-fry everything for another minute. Return the meat to the wok and pour in the soy sauce and sherry. Bring to a boil while constantly stirring, then reduce the heat and cook for another 2 to 3 minutes. Finally, sprinkle everything with toasted sesame seeds, mix well, and remove from heat. Serve with pasta or rice.

If we dont have sugar snap peas, we can use green beans or snow peas.
