1 handful Basil, fresh

5 twig Parsley, fresh

8 pods Garlic, fresh

2 piece Lemon, fresh, without shell

2 pinch Salt, table

1 pinch Spices, pepper, black

1.5 kg Meat, lamb, ribs

Steps

Wash the basil and parsley leaves, roughly chop them, and place them in a bowl. Peel the garlic, finely chop it, and add it to the bowl, then squeeze two lemons and pour the juice into the bowl. Season the mixture with salt and pepper and mix well.

Rinse the ribs under running water, dry them with a paper towel, and soak them in the herb marinade, making sure the meat is coated on all sides. Cover the bowl with the marinade and meat and refrigerate for one hour.

Preheat the oven to 200°C, then pour oil into the baking dish. Remove the ribs from the marinade, place them in the baking dish, and bake in the preheated oven for 40 minutes. During baking, turn the meat and baste it several times with the juices from the dish. Towards the end of baking, pour the remaining marinade from the bowl over the meat. Serve the roasted ribs on plates and offer with a glass of good wine and a piece of homemade bread.

Advice
Make sure to add enough oil to the baking dish, as the herbs should not burn. To enhance the flavor, you can pour a glass of dry white wine over the meat - in this case, add a little less oil. If the roasted ribs are too greasy, drain them on paper towels.
