2 pod Garlic, fresh

115 g Olives, green, in brine

115 g Olives, black, in brine
Steps

Take the olives from the can or jar and drain them well. Wash the rosemary and parsley thoroughly and chop them finely. Peel the garlic and crush it with a knife. Place the olives in a large bowl and add coriander, anise, rosemary, parsley, and garlic.

Add the oil and vinegar, then mix well with your hands or a spoon. Cover the bowl with plastic wrap and place it in the refrigerator for up to one week. Transfer the marinated olives to a smaller serving bowl and offer them to your guests.

Advice
Olives with pits are more suitable for marinating than pitted ones. If serving olives from a jar, first drain them, rinse, and dry with paper towels.
