Steps

Slice the onion, celery, bell pepper, and tomato into pieces and place them in a bowl. Add torn rosemary, olive oil, and a few drops of lemon and mango vinegar. Mix everything well and refrigerate for half an hour to let the flavors blend.

Rinse and dry the sea bass. Lightly season it inside and out with salt and pepper, then generously rub it with the marinade and refrigerate for 1 to 2 hours.

Cut the peeled potatoes into 2x2 cm cubes and place them in an oiled baking dish. Add salt and chili, and mix the potatoes well to ensure even seasoning. Place the dish in a preheated oven at 210°C. After 20 minutes of baking, add the marinated fish. Before placing it in the dish, make 2 to 3 diagonal cuts on the top side of the fish with a sharp knife. Sprinkle with sliced fresh chili, add garlic, and pour the remaining marinade over the fish. Bake the potatoes and fish together for another 25 minutes.
