Marinated Squid with Baked Potatoes
The scent of the sea, the taste of wine, and the sweet softness of baked potatoes, rounded off with a bouquet of Mediterranean herbs. An excellent seafood dish prepared right in the oven.

Ingredients
Marinade

1 dl Alcohol, Wine, White

1 dl Oil, olive

1 spoon Butter, unsalted

4 pods Garlic, fresh

pieces Rosemary, fresh

2 piece Spices, bay (leaves)

pieces Lemon, fresh, without shell

500 g Fish, squid

500 g Potatoes, white

1 piece Carrot, fresh

1 piece Parsley, fresh

10 pieces Olives, black, in brine

Steps

First, prepare the marinade. Place all the ingredients in a small pot or saucepan and slowly heat them almost to boiling point. Remove from heat and let the marinade cool to lukewarm to release the aroma of the herbs.

Clean and rinse the squid as needed. Dry them with paper towels. Peel the potatoes and cut them into chunks.

Peel the carrots and slice them thinly on a diagonal. Peel the parsley root and chop it into small cubes. Slice the black olives into rings and cut the tomatoes in half. Slice the leeks as thinly as possible on a diagonal.

Transfer all the vegetables and potatoes to a deep baking dish, season with salt, and pour half of the marinade over them. Bake at 220°C for about 30 minutes, until the potatoes turn a nice golden color.

Pour the other half of the marinade over the cleaned and salted squid. Mix well and let them marinate while the potatoes and vegetables are baking.

When the potatoes are slightly baked, place the marinated squid on top. Pour the remaining marinade over everything. Bake for another 15 to 20 minutes (depending on the size of the squid) at the highest temperature.

Place the baking dish directly on the table and enjoy the delightful flavors of the baked squid and potatoes. Serve with good bread, as the marinade transforms into a delicious sauce during baking, perfect for dipping pieces of bread.

Advice
The marinade can be prepared a day in advance. Make sure to thoroughly clean the inside of the squid tubes, as they may contain fine sand that can be unpleasant when eating. Fresh herbs are best, but dried ones can be used if necessary. The parsley root and greens can also be grated. Do not overcook the squid, as they can become tough and rubbery. Add them to the potatoes and other vegetables only in the second half of the baking time. They should be cooked briefly at a high temperature. The marinade will transform into a thick, aromatic sauce during baking, so use the entire amount.
