Marinated Treviso Radicchio

Wash the radicchio and cut it in half.

In a large pot, boil half a liter of water, vinegar, salt, three bay leaves, and five juniper berries. Once the liquid boils, add the radicchio and let it cook for three to four minutes.

Place the radicchio on a dry cloth and let it cool. Once cooled, arrange it in a shallow dish, generously drizzle with oil and the cooking liquid. Cover the dish and let it marinate for one day.

The next day, place the marinated radicchio on a plate, drizzle with the marinade liquid, and serve with homemade bread.
