Marmitako
Marmitako is a traditional Basque dish, which translates to "from the pot." What comes out of it is a delicious fish stew that must include pieces of fresh bonito or tuna, potatoes, peppers, olives, and garlic. The dish is an excellent choice for slightly colder days when we crave hearty meals that will warm us from the inside.

Ingredients

1 piece Bell pepper, green, fresh

2 pod Garlic, fresh

1 kg Potatoes, white

500 g Fish, Tuna, yellowtail

Steps

Place the dried peppers in a bowl and pour enough boiling water over them to fully cover them. Peel the garlic and onion, then finely chop them separately. Wash the pepper, remove the seeds, and cut it into pieces.

Heat olive oil in a large pot. Add the chopped vegetables and sauté them over medium heat, stirring occasionally, until the onion becomes translucent. Peel the potatoes, wash them, and cut them into approximately 4 cm pieces. Add them to the pot with the sautéed vegetables. Stir and cook for another 2 minutes, then add enough water or fish stock to fully cover the vegetables.

While the vegetables are cooking, drain the soaked peppers well. Use a spoon to scrape the softened flesh from the skin, finely chop it, and add it to the pot. Stir well to evenly distribute the pepper.

Wash the fish, dry it thoroughly with paper towels, and clean it if necessary (remove the skin and bones). Cut it into pieces roughly the same size as the potatoes. Add the fish pieces to the pot only when the potatoes are almost fully cooked. Add more water if needed, season with salt (and pepper if desired), partially cover the pot, and simmer gently for 5 to 10 minutes until the tuna pieces are nicely cooked.

Rinse the parsley under running water, shake it dry, and roughly chop it. Sprinkle it over the prepared dish, serve on plates, and accompany with bread.
