Maros Lamb with Apricots and Almonds

3 spoons Oil, olive

700 g Meat, lamb, back

1 piece Onion, raw

3 pods Garlic, fresh

pieces Juice, orange

pieces Orange, shell

1 piece Spices, cinnamon, ground

1 teaspoon Honey

0.5 teaspoons Salt, table

2 pinch Spices, pepper, black

700 ml Soup base, chicken, cube

180 g Apricot, dry

50 g Nuts, almonds

Peel the onion and garlic, then finely chop them separately. Clean the lamb if necessary, wash it, and pat it dry, then cut it into bite-sized pieces.

Heat olive oil in a pot. Add the lamb pieces and fry them over medium heat, stirring occasionally, for 3 to 4 minutes or until they are nicely browned on all sides. Remove the browned pieces of meat from the pot and keep them warm on a plate.

Add the onion to the pot and fry it until translucent. Then add the garlic and fry it together with the onion for 1 minute. Return the browned pieces of meat to the pot and add orange juice, grated zest, cinnamon stick, honey, salt, and pepper. Mix everything well and pour in the broth. Bring the contents to a boil, then reduce the heat, cover the pot, and cook the dish over moderate heat for 1 hour.

After one hour of cooking, add the apricots to the pot. Cover and cook the dish for another 30 minutes or until the meat is tender. If necessary, add a little more liquid (water or broth).

Once the meat is tender, stir in the ground almonds to thicken the sauce. Serve the dish with couscous or bulgur.
