Maroška Orange Cake
The cake has a very intense aroma and flavor, as it is made from whole oranges and cardamom, a spice with a pleasant sweet scent and a bittersweet taste. Both ingredients complement each other perfectly in the cake and ensure that the kitchen will smell intoxicatingly good while baking.

Carefully wash the oranges under running water and place them in a suitably sized pot. Cover them with enough cold water (enough to fully submerge them). Cover the pot and place it on the stove. Cook the oranges covered over medium heat for about 1 hour or until they are completely softened. They are cooked when a thin knife can be easily inserted into the fruit. Drain the cooked oranges well and let them cool.

Preheat the oven to 180 degrees Celsius. Lightly grease a round springform pan (21 cm in diameter) with butter, then line the bottom and sides with parchment paper. Cut the cooled oranges into quarters and remove any seeds. Place the quarters in an electric blender and blend them into a smooth puree.

Transfer the fruit puree to a bowl. Mix it with eggs, sugar, and cardamom. Then, fold in the ground almonds, polenta, and baking powder. Pour the batter into the prepared pan and bake in the preheated oven for about 40 to 50 minutes. The cake is done when a toothpick inserted into the center comes out clean.

Let the baked cake cool in the pan for a few minutes, then transfer it to a wire rack and let it cool completely. Serve the cooled cake on a nice plate or platter, garnish with citrus slices and zest, cut into desired-sized pieces, and serve with whipped cream, ice cream, or Greek yogurt.
