Place the almond flour and vanilla seeds in a food processor. In a small pot, mix sugar, water, and glucose syrup. Heat the mixture over medium heat, stirring until all the sugar is completely dissolved. Be careful not to let the sugar syrup boil! Pour the hot syrup into the food processor with the almonds and mix until the ingredients are finely ground and come together.

Dust the work surface with powdered sugar and transfer the mixture from the food processor onto it. Knead the mixture and shape it into a "brick," lightly dust it with powdered sugar, and wrap it in food wrap. Store the marzipan in the refrigerator and let it come to room temperature before use.

Advice
When preparing marzipan, do not mix the almond flour until you add the sugar syrup, otherwise it will release fat.
