Sift most of the powdered sugar into a large bowl. Add regular sugar, grated orange peel, and ground almonds, and mix everything well. Make a well in the center of the dry ingredients and add the egg white, almond extract, and rum. Mix all the ingredients well with a wooden spoon to form a soft but firm dough.

Sprinkle the remaining powdered sugar on a clean work surface. Then place the almond mixture on the work surface. Knead the mixture well with clean hands. Knead until all the sugar is incorporated and you have a smooth almond dough that can be shaped. Add more powdered sugar if needed.

Sprinkle ground almonds on a shallow plate. Shape the prepared almond dough into balls of any size with your hands, then roll them in the ground almonds. Place the prepared balls on a baking sheet lined with parchment paper. Store the baking sheet with the balls in the refrigerator to firm them up. Serve the chilled and firm balls on a plate or platter.

Advice
The balls can be decorated with rose petals, blanched almonds, candied orange peel, etc. Instead of ground almonds, the balls can be rolled in coconut or cocoa. It is best to use organic oranges, whose peel is not treated with pesticides. If organic oranges are not available, dip the orange in boiling water for a few minutes, then wipe it well to remove the wax, which contains toxins.
