Ingredients

120 dag Breadcrumbs, dried

4 pieces Egg, fresh

60 g Sugar, white

220 g Cheese, creamy

2 teaspoons Cocoa, powdered, unsweetened

Place the amaretti in a bowl and crush them into crumbs (you can also grind them in a food processor). Evenly distribute half of the crumbs into four tall glasses.

Separate the egg yolks and whites into two bowls. Using an electric mixer, whisk the yolks with sugar until frothy. Gradually mix the mascarpone into the frothy yolks. Beat the egg whites into stiff peaks and gently fold them into the mascarpone and yolk mixture. Mix until you achieve a smooth cream.

Fill all four glasses with the cream to about 1/3 of their height and sprinkle the remaining cookie crumbs over the cream. Then, fill the glasses to the top with the remaining cream. Refrigerate the glasses for 2 hours.

At the appropriate moment, take the glasses with the chilled mascarpone cream out of the refrigerator and dust the top with cocoa powder. Serve the dessert to your guests.

Advice
For the preparation of the dessert, use the freshest eggs possible. Optionally, you can also mix in 2 to 4 tablespoons of amaretti into the cream.
