Mascarpone Cream with Raspberries and Ladyfingers

Ingredients

200 ml Sweet cream

2 piece Egg, egg yolk, fresh

60 g Sugar, white

200 g Cheese, creamy

2 piece Egg, egg white, fresh

18 pieces Breadcrumbs, dried

150 ml Juice, orange

2 spoons Alcohol, Liqueur, Crème de Menthe

400 g Raspberries

0.5 teaspoons Orange, shell

Whip the cream until stiff and store it in the refrigerator until use. Beat the egg yolks with sugar until they become frothy. Place the mascarpone in a bowl and mix it smoothly with a hand whisk. Add the egg yolks and whipped cream, and mix everything well. Finally, beat the egg whites until stiff and gently fold them into the mascarpone cream in two or three batches using a hand whisk. Store the cream in the refrigerator until use.

Pour orange juice into a shallow bowl and mix it with Grand Marnier. Dip the ladyfingers on both sides into the orange juice and use them to cover the bottom of a glass bowl (break them into smaller pieces if necessary). Sprinkle some raspberries over the ladyfingers and cover them with half of the mascarpone cream. Add another layer of ladyfingers, also dipped in orange juice on both sides. Sprinkle raspberries over the ladyfingers and cover them with the remaining half of the cream. Top the cream with the remaining raspberries and finely grate some orange zest over the top.

Cover the bowl and refrigerate for a few hours to allow the dessert to cool and set.
