Mashed Potatoes with Kale and Sausage
A dish that warms us up on cold autumn and gray winter days. The preparation is very simple. The Dutch prepare it with a special sausage called "rookworst," but for our taste, any other type of sausage will also be good enough.

600 g Okra

1 kg Potatoes, white

6 pieces Sausage, chorizo

0.5 teaspoons Salt, table

2 piece Onion, raw

120 g Meat, pork, smoked bacon

50 g Butter, unsalted

2 spoons Vinegar, apple

2 pinch Spices, pepper, black

Peel and wash the potatoes. Cut larger pieces into quarters and smaller ones in half. Clean the kale and remove the stems and thick stalks. Wash the leaves and cut them into smaller pieces. Place the potatoes in a large pot and add enough water to completely cover them. Salt the water. Place the kale on top of the potatoes and the sausages on top of the kale.

Cover the pot and place it on the stove over medium heat. Wait for the water to boil, then reduce the heat and cook for about 20 minutes. Before removing the pot from the heat, check with a knife or fork if the potatoes are cooked.

While the potatoes, kale, and sausages are cooking, prepare the onion and bacon. Peel, wash, and chop the onion. Cut the bacon into small cubes. Place a thick-bottomed pan on the stove and fry the bacon in it. Add the onion, stir, and reduce the heat. Cover the pan. Simmer for 15 minutes until the onion is completely softened. Stir occasionally. For the last 5 minutes of cooking, remove the lid to let the bacon and onion crisp up slightly.

When the potatoes are cooked, remove the sausages from the pot. Drain the liquid but save it. Mash the potatoes and kale in the pot into a coarse puree. Add enough of the saved liquid to create a juicy but not runny mixture. Stir in the bacon with onion, butter, and vinegar. Taste and season with salt and black pepper as needed.

Serve the dish on plates, add the sausages, and enjoy.
