Mashed Potatoes with Sauerkraut, Bacon, and Onion

350 g Sauerkraut

100 g Meat, pork, smoked bacon

Peel and wash the potatoes. If the potatoes are large, cut them into quarters, while smaller potatoes can be left whole or halved. Place the potatoes in a pot and cover them with cold water until fully submerged. Add salt and cumin seeds to the pot. Taste the sauerkraut, and if it seems too sour, quickly rinse it under running water in a colander. Place the sauerkraut in a pot and cover it with water. Season with salt to taste.

Place the pot with potatoes on the stove and cook over moderate heat until the potatoes soften. Similarly, place the pot with sauerkraut on the stove and cook covered until the sauerkraut softens.

Drain the cooked potatoes and mash them together with the cumin. Cut the bacon into smaller pieces. Peel the onion and slice it into thin rings. Drain the cooked sauerkraut and add it to the pot with the mashed potatoes. Pour in the milk and mix everything well.

Spread the mixture of sauerkraut and mashed potatoes onto plates or deep bowls. Heat oil in a pan and fry the bacon pieces until crispy. Sprinkle the crispy bacon over the potatoes and sauerkraut. Add the onion to the pan and sauté it while stirring until softened. Finally, sprinkle the sautéed onion over the dish and serve.
