Mashed Potatoes with Wild Garlic Pesto

1 kg Potatoes, white

250 ml Milk, whole milk

1 pinch Spices, nutmeg, ground
Steps

Peel the potatoes and cut them into smaller pieces. Place a pot with 1.5 liters of water on the stove and add 0.5 teaspoons of salt. Add the potato pieces and cook them partially covered for about 15 minutes.

Meanwhile, in a separate pan without added fat, quickly toast the pine nuts until they turn golden brown. Thoroughly wash the wild garlic, clean it, remove the stems, and roughly chop it. Then, blend the wild garlic, cooled pine nuts, Parmesan, and oil in a mixer into a smooth paste, seasoning it with salt and pepper to taste.

Once the potatoes are cooked, remove 4 tablespoons of water and add them to the pesto. Drain the remaining liquid well and mash the potatoes into a separate pot. Place a smaller pot on the stove and heat the milk, which you then mix into the potatoes. Season the mash with nutmeg and salt to taste.
