In one bowl, mix almond milk and vinegar, and in another, mix flaxseed meal and water. Set both mixtures aside.

In a bowl, combine all dry ingredients: buckwheat flour, almond flour, baking powder, salt, matcha, and coconut sugar. In another bowl, mix almond milk, the "flax egg," and melted coconut oil. Pour the wet ingredients into the bowl with the dry ingredients and mix well until you get a thick batter.
