Meat and Vegetable Tortellini
Homemade fresh stuffed pasta served in a classic beef broth.

200 g Salami, Mortadella (beef and pork)

300 g Wheat flour, white, multi-purpose

1 l Soup base, beef, cube

Cut the mortadella and ham into pieces. Crack the egg and beat it. Wash and shake the herbs, pluck the leaves, and place them along with the other filling ingredients into a food processor. Add salt and pepper, then blend all the ingredients in the food processor until you get a smooth mixture.

Pour the flour onto the work surface, salt it, and make a well in the center. Crack the eggs into the well. With wet fingertips, start kneading from the middle, gradually incorporating the flour with the eggs. Knead for about 10 minutes until you get an elastic and smooth dough.

Shape the dough into a ball, wrap it in a kitchen towel or parchment paper, and let it rest for half an hour in a dry and cool place. Then knead it again and shape it into a loaf. Lightly dust the work surface and rolling pin with flour. Cut the loaf into slices about 1.5 cm thick, which we will roll out.

Roll out the dough into wide strips, then cut them into rectangles approximately 3 x 5 cm in size. Place a hazelnut-sized amount of filling in the center of each rectangle. Fold the rectangles into triangles and press the edges firmly with your fingers. Place the stuffed triangles on a kitchen towel.

Shape the tortellini by wrapping each triangle around your thumb (or your pinky if you have thicker fingers). Seal both corners and press them together. Thoroughly wash the parsley, dry it, and pluck the leaves.

Place the prepared broth on the stove and wait for it to boil. Then add the tortellini and cook for about 15 minutes. Serve the prepared broth in deep bowls and garnish with fresh parsley.
