Meatballs in Tomato Sauce with Beans
An excellent dish that doesnt need a side. Its best served with homemade bread. Believe me, youll need it because youll be wiping your plates clean to the last drop.

700 g Meat, pork, ground

400 g Beans, grains, cooked

Steps

Peel and finely chop the onion and garlic. Clean, peel, and wash the carrot. Cut it into small pieces. Wash and clean the bell pepper (remove the stem and seeds). Cut it into small pieces. Finely chop the chili (remove the seeds if desired).

Heat 2.5 tablespoons of olive oil in a pot. Add the chopped onion and diced carrot to the hot oil. Sauté while stirring until the onion becomes translucent. Then add thyme, garlic, bell pepper, and chili. Cook the ingredients in the pot while stirring for another 2 to 3 minutes.

Pour red wine over the vegetables and wait for the contents of the pot to boil. Then add the canned tomatoes. Mix well and wait for it to boil again, then reduce the heat, cover the pot, and cook for 15 to 20 minutes to thicken the sauce slightly. Season with salt and pepper to taste.

While the sauce is cooking, prepare the meatballs. Place the ground meat in a bowl. Add the egg, salt, and pepper, and knead everything well with your hands. Shape the mixture into small meatballs.

Heat 2 tablespoons of olive oil in a pan. Add a few meatballs to the hot pan and cook them without moving for 2 minutes over medium heat. Then carefully turn them with a spatula or tongs for another 6 minutes to brown them on all sides. Remove the cooked meatballs from the pan and keep them warm on a plate. Repeat the process with the remaining meatballs.

Transfer the cooked meatballs to the pot with the tomato sauce. Cook the dish uncovered for another 25 to 30 minutes, or until the tomato sauce thickens.

About 10 minutes before the end of cooking, add the rinsed and drained canned beans to the dish.

Serve the prepared dish in deep bowls, sprinkle with chopped parsley, and enjoy.
