Meatloaf with Herbs

Steps

Preheat the oven to 190 degrees Celsius. Grease a deep rectangular baking dish and line it with parchment paper. Cut the bread slices into cubes, place them in a bowl, and pour milk over them. Let the bread soak up the liquid. Peel and finely chop the onion and garlic separately. Roughly chop the herbs.

Heat olive oil in a pan. Add the onion and sauté it until it becomes translucent. Then add the garlic and sauté for another minute. Remove the pan from the heat and let the contents cool.

In a bowl, add the ground meat, mustard, beaten egg, sautéed onion and garlic, soaked bread, chopped herbs, salt, and pepper. Mix all the ingredients thoroughly with clean hands to form a uniform mixture.

Shape the mixture into an oblong loaf with your hands and place it in the prepared baking dish. Bake the meatloaf in the preheated oven for 50 minutes. Then increase the oven temperature to 210 degrees Celsius and bake the loaf for another 10 to 15 minutes until it turns nicely brown on top.

While the loaf is baking, prepare the herb sauce. In an electric chopper, add capers, parsley, marjoram, crushed garlic clove, salt, pepper, mustard, and a little olive oil. Finely chop the ingredients, transfer them to a small bowl, and mix with the remaining olive oil. Taste the sauce and season with additional pepper and salt if desired.

Remove the baked loaf from the oven and let it rest for 5 minutes before slicing. Serve it with the herb sauce and your chosen side dish.
