Meatloaf with Mushrooms

Clean the mushrooms, rinse them quickly, and slice them into thin pieces. Peel the onion and finely chop it. Heat oil in a wide pan and sauté the onion until it becomes translucent and soft. Add the mushrooms and sauté for 5 minutes, stirring constantly. Rinse the parsley thoroughly and finely chop it. In a bowl, beat the eggs with a whisk.

Preheat the oven to 180°C. In a large bowl, knead the meat well with your hands or a mixer, adding the sautéed onions with mushrooms, parsley, breadcrumbs, eggs, herbs, salt, and pepper. On a work surface, lay out a larger piece of aluminum foil, grease it with oil, and spread the meat mixture on it. Shape it into a loaf and wrap it in the foil.

Transfer the loaf to a medium-high baking dish and place it in the preheated oven on the middle rack. Bake for about 30 minutes, then turn the loaf over and bake for another 30 minutes. Remove the baking dish from the oven, wait 10 minutes for the loaf to cool slightly, and carefully remove the foil. Slice the loaf and arrange it on plates. Serve with mashed potatoes and a seasonal salad.
