Meatloaf with Vegetables
To spice up the flavor, mushrooms, bell peppers, and white beans are used. Give it a try, you wont regret it!

Ingredients

2 spoons Oil, olive

1 piece Onion, raw

0.5 teaspoons Spices, thyme, dried

0.5 teaspoons Spices, paprika

0.75 teaspoons Salt, table

0.5 teaspoons Spices, pepper, black

300 g Mushrooms, mushrooms, fresh

1 piece Bell pepper, red, fresh

4 pods Garlic, fresh

425 g Beans, grains, cooked

600 g Meat, ground turkey

2 piece Egg, fresh

3 teaspoons Worcestershire sauce

2 teaspoons Mustard
Steps

Drain the beans from the can, rinse under running water, and set aside. Clean the mushrooms, wipe them with a damp cloth (rinse quickly under running water if needed), and finely chop them. Wash the bell pepper under running water and remove the stem and seeds. Then cut it into smaller pieces. Peel the onion and garlic, and finely chop them.

Heat oil in a pan and sauté the onion along with thyme, paprika powder, salt, and pepper while stirring. Once the onion softens slightly (after about 5 minutes), add the fresh bell pepper, mushrooms, and garlic. Continue to sauté everything together for another 5 minutes while stirring. Remove the pan from the heat and let it rest for 5 minutes.

Place the beans in a bowl and mash them well with a fork or potato masher (you can also blend them with a hand mixer). Add the ground meat, eggs, and the cooled mixture of onions, mushrooms, and bell peppers. Season additionally with pepper and salt if desired. Mix all the ingredients well with damp hands to form a uniform mixture.

Shape the mixture into a loaf with your hands and transfer it to a prepared baking dish. Bake in the preheated oven for 50 minutes.

In a small bowl, mix together Worcestershire sauce and mustard. Take the baking dish out of the oven and spread the prepared mixture over the top of the loaf. Return it to the oven for another 10 to 15 minutes.

Remove the baked loaf from the oven and let it rest for 5 minutes before slicing. Serve the loaf with your chosen side dish.
