Mediterranean Baked Pasta

Ingredients
Béchamel

50 g Butter, unsalted

50 g Wheat flour, white, multi-purpose

5 dl Milk, whole milk

1 pinch Salt, table

2 pinch Spices, pepper, black

700 g Pasta, Macaroni

400 g Tomato, red

1 handful Olives, black, in brine

1 spoon Basil, fresh

0.5 teaspoons Spices, oregano, dried

150 g Cheese, feta

100 g Cheese, mozzarella

Place a large pot with plenty of water on the stove. Just before the water boils, add salt. Add the pasta to the boiling water and cook until al dente (follow the instructions on the package). Drain the cooked pasta.

Preheat the oven to 200°C (392°F). Grease a deep baking dish well with butter. Wash and clean the tomatoes. Cut them into wedges and remove the seeds. Then cut them into small pieces. Slice the olives into thin rings.

Melt the butter in a saucepan. Add the flour to the melted butter and lightly sauté it while stirring (cook for about 1 minute). Gradually pour in the milk while continuously stirring. Ensure the mixture is smooth and free of lumps. Cook the béchamel sauce over low heat, stirring for about 5 minutes until it thickens slightly. Remove the saucepan from the heat and mix in 2/3 of the crumbled feta cheese. Stir well until the cheese melts, then taste the béchamel and season with pepper and salt if needed.

Place the drained pasta in a bowl. Add the tomatoes, olives, basil, and oregano. Mix everything well, then pour the béchamel sauce over it. Mix again thoroughly and transfer to the prepared baking dish. Top with grated mozzarella and the remaining feta cheese. Bake in the preheated oven for 20 to 25 minutes until the cheese melts and turns golden brown.

Advice
If desired, peel the tomatoes. The easiest way to do this is to dip them in boiling water for 1 to 2 minutes, cool them, and then peel them. Remove the seeds and cut the flesh into small pieces.
