Ingredients
-
2 pod Garlic, fresh
-
1 piece Onion, raw
-
600 g Meat, chicken, breasts
-
1 piece Tomato, red
-
12 slice Cheese, mozzarella
-
0.5 bouquet Basil, fresh
-
12 pieces Tomato, red
-
0.5 cans Olives, black, in brine
-
4 spoon Oil, olive
-
0.25 teaspoons Salt, table
-
1 pinch Spices, pepper, black
-
1 handful Pine nuts
Steps
-
Peel and finely chop the garlic and onion. Thoroughly wash the chicken meat and dry it with paper towels. Cut it into thicker slices. Wash the tomatoes and basil thoroughly, and drain the olives. Remove the green parts from the regular tomato and slice it into rings, wash the cherry tomatoes thoroughly and halve them.
-
Cut the basil into strips. Place a pan on the stove and heat it up, then add 2 tablespoons of oil. Sear the chicken breasts on both sides until golden brown and season with salt and pepper to taste. Place the tomato rings on top of the cooked chicken pieces, cover them with slices of mozzarella, and bake covered for a few minutes until the cheese melts.
-
Place a new pan on the stove, add 2 tablespoons of oil, heat it up, and sauté the onion until golden brown. Add the basil and pine nuts and continue to sauté for a few more minutes. In the last minute, add the garlic and quickly sauté it to release its aroma.
-
Serve the chicken breasts with melted mozzarella on plates, drizzle them with the sautéed basil and pine nuts, and garnish the prepared dish with olives and cherry tomatoes.
