Mediterranean Fish Medallions with Pernod Sauce

150 g Fish, catfish, fresh

Shape the fish fillets in silicone molds. Place finely diced Mediterranean vegetables in the center and season with olive oil, salt, and Mediterranean herbs. Bake for 15 minutes at 250 degrees Celsius.

While the fillets are baking, prepare the sauce. Add cooking cream, chopped fennel, and salt to the fish stock. Cook over low heat while stirring for about 5 minutes. At the very end, mix in homemade Pernod (liquor).
