Mediterranean Potato Salad

750 g Potatoes, white

5 pieces Tomato, dried

2 spoons Pine nuts

6 pieces Fish, anchovy fillets in oil

3 spoons Juice, lemon

5 spoon Oil, olive

4 pieces Olives, black, in brine

Thoroughly wash the potatoes and scrub them with a brush if needed. Place a large pot on the stove, add the potatoes, and cover them with cold salted water (add half a teaspoon of salt to the water). Cook them in their skins for 25 to 30 minutes until tender. Check if the potatoes are cooked by inserting a sharp knife. Drain the cooked potatoes and let them cool.

Toast the pine nuts in a dry pan. Shake the pan frequently to prevent burning. Transfer the toasted pine nuts to a small bowl. Cut the sun-dried tomatoes into smaller pieces or strips. Pit the olives and finely chop them. In a small bowl, prepare the salad dressing by mixing lemon juice, chopped olives, and olive oil.

Peel the cooled potatoes and slice them. Place the slices in a large salad bowl. Add the sun-dried tomatoes, pine nuts, and anchovies with capers to the bowl. Pour the salad dressing over everything. Mix the salad just before serving.
