Ingredients

1 kg Meat, chicken, thighs

1 teaspoon Salt, table

0.5 teaspoons Spices, paprika

2 piece Lemon, fresh, without shell

4 twig Rosemary, fresh

0.5 dl Oil, olive

5 pods Garlic, fresh

1 cup Olives, green, in brine

1 cup Olives, black, in brine
Steps

Using a large, sharp knife, cut the cleaned chicken in half along the backbone. Rinse both halves under running water and dry them with paper towels. Rub the meat with salt and ground red paprika. Preheat the oven to 200 degrees Celsius.

Grease a baking dish with olive oil and place the chicken halves in it. Wash the lemon and slice it into rounds, then distribute the rounds over the chicken. Wash the second lemon, zest it, and pour the juice over the chicken.

Peel the garlic and place the cloves around the meat. Evenly distribute the rosemary over the meat, then place the baking dish in the preheated oven. Roast the chicken for 25 minutes, then turn it over and add the olives to the dish. Roast for another 20 minutes. Serve the roasted chicken directly in the baking dish.

Advice
Thyme also pairs excellently with chicken. You can marinate the meat a day in advance using the same ingredients that you add to the baking dish with the chicken. To enhance the flavor, you can add a bit of dry white wine.
