Mediterranean Wrap
Delicious, rich, and juicy wraps that will become a family favorite. Filled with chicken, fresh and roasted vegetables, hummus, and yogurt sauce. You can also omit the chicken or replace it with roasted tofu or shrimp. Watch the preparation process in the video below.

Ingredients

500 g Meat, chicken, breasts

1 piece Small pumpkins

0.5 piece Eggplant, raw

1 spoon Butter, unsalted

2 spoons Vinegar, balsamic

150 g Yogurt, plain, from whole milk

2 pod Garlic, fresh

0.5 teaspoons Thyme, raw

1 piece Sweet potato, unpeeled, fresh

1 handful Tomato, red

0.5 piece Bell pepper, green, fresh

1 piece Avocado, fresh

2 spoons Olives, green, in brine

0.5 piece Onion, raw

200 g Chickpea, cooked

Steps

Cut the chicken, zucchini, and eggplant into smaller pieces. Pour a little olive oil into a pan and cook the chicken for five minutes.

Once the chicken is cooked, transfer it to a plate, and add butter to the pan. Sauté the zucchini and eggplant pieces for five minutes. At the end, add balsamic vinegar, sauté the vegetables a bit more, and remove from heat.

In a bowl, mix Greek yogurt with finely chopped or pressed garlic, salt, and thyme.

Cut the cucumber, bell pepper, and avocado into smaller pieces, cherry tomatoes into quarters, and finely chop the onion and olives. Mix all the vegetables with a tablespoon of olive oil, salt, and pepper.

Quickly toast the tortillas in a dry pan and spread a heaping tablespoon of hummus on each. Add shredded young cabbage, a bit of salad, chicken pieces, and roasted vegetables. Add a bit of yogurt sauce, wrap, and serve.
