Wash the parsley thoroughly and chop it finely. Cut the melon in half and slice each half into larger chunks. Remove the seeds and peel, then cut them into smaller sticks.

Wrap each stick with a slice of prosciutto and place it on a serving platter. Drizzle everything with balsamic vinegar and season to taste with pepper and salt. Sprinkle with chopped parsley and serve the appetizer to your guests.
