Ingredients
Egg white dough

1 teaspoon Vanilla, extract, natural

1 teaspoon Vinegar, apple

200 g Pudding, vanilla

170 ml Sweet cream

Steps

Preheat the oven to 150 degrees Celsius. Line a low baking tray with parchment paper.

Beat the egg whites with salt using an electric mixer until stiff peaks form. Gradually add powdered sugar (spoon by spoon) while continuously mixing. Finally, gently fold in the cornstarch, vanilla extract, and vinegar.

Spread the meringue evenly on the prepared baking tray. Place the tray in the preheated oven for 30 minutes, allowing the meringue to become crispy on the outside while remaining soft inside.

Remove the tray from the oven and cover it with a damp cloth. Wait until the meringue has completely cooled.

In a bowl, whip the sweet cream together with powdered sugar using an electric mixer until stiff. Gently fold the lemon curd into the whipped cream.

Lay a dry kitchen towel on the work surface and sprinkle it with powdered sugar. Flip the cooled meringue onto the towel. Remove the damp cloth and parchment paper. Spread the prepared cream over the meringue and carefully roll it lengthwise.

Place the roll on a serving platter, slice it into portions, and serve immediately.
