Meringue Roll with Mascarpone, White Chocolate, and Raspberries

1 teaspoon Vinegar, red wine

1 teaspoon Vanilla, extract, imitation

1 teaspoon Koruzni škrob

4 pieces Egg, egg white, fresh

100 g Sugar, white

100 g chocolate, dark

250 g Cheese, creamy

100 ml Sweet cream

200 g Raspberries

Steps

Preheat the oven to 160 degrees Celsius. Line a roll baking pan or a larger baking pan with parchment paper.

In a small bowl, mix vinegar, vanilla extract, and cornstarch. Beat the egg whites into stiff peaks, then alternately add a little of the vinegar, vanilla, and cornstarch mixture and a bit of sugar. Mix well with an electric mixer each time. Once both are used up, mix for a few more minutes to dissolve the sugar.

Spread the egg white mixture evenly in the baking pan, smooth it out, and then bake for 25 minutes.

Place a kitchen towel on the counter, cover it with a piece of parchment paper, and sprinkle it with sugar. Once the dough is baked, flip it onto the prepared surface. Carefully remove the parchment paper used for baking, then place a new piece on top. Gently roll the dough into a roll and let it cool.

Meanwhile, melt the white chocolate over a double boiler. Once slightly cooled, mix it with mascarpone. Finally, whip the cream and gently fold it in.

Unroll the dough, remove the parchment paper, and spread the filling over the dough. Distribute the raspberries over the filling and gently press them in. Larger raspberries can be cut in half beforehand.

Carefully roll the roll. Wrap it in the used parchment paper and refrigerate for at least two hours. Before slicing, dust it with powdered sugar.
