Metas Roll
The author of the recipe is Mojca Javh, who competed for the win in the second season of the show Gostilna išče šefa. Unfortunately, she was eliminated in the second round. Mojca is a big fan of mushroom dishes and simple homemade desserts, such as rice pudding. Like her sister Meta, she has celiac disease and must avoid gluten. She shared with us a recipe for a delicious gluten-free roll with blueberries.

Ingredients

6 pieces Egg, egg white, fresh

20 dag Powdered sugar

15 dag Nuts, almonds, blanched

3 dl Sweet cream

20 dag Blueberry, raw

Beat the egg whites into stiff peaks, and at the end, mix in the sugar. Spread the egg white mixture evenly on baking paper that has been previously greased with oil. Sprinkle almonds over the egg whites and bake the base for 10 minutes in an oven preheated to 180 degrees Celsius. After 10 minutes, reduce the temperature to 160 degrees Celsius and bake for another 8 minutes.

Roll the baked egg whites together with the baking paper and let it cool.

Whip the cream until stiff. Unroll the cooled base and spread the whipped cream over it. Sprinkle blueberries over the cream and roll it up again, this time without the baking paper. Slice into pieces and serve.
