Milk Rice: In a pot, combine regular milk, vanilla milk, rice, cinnamon, and sugar. Split the vanilla bean in half and scrape out the seeds with the tip of a knife, adding both the seeds and the pod to the pot. Cook the mixture over medium heat until the rice softens and a thick porridge forms.

Passion Fruit Syrup: Scoop out the passion fruit pulp and place it in a pan. Add vanilla sugar and gently heat it. Strain the syrup to remove the seeds.

Mascarpone and Passion Fruit Cream: Whip the cream halfway. Add mascarpone and a little passion fruit syrup, then mix well until a thick cream forms. Store it in the refrigerator.

Yogurt and Passion Fruit Espuma: In a siphon, combine cream, Greek yogurt, and a little passion fruit syrup.

Remove the vanilla bean from the milk rice and serve it in bowls, containers, or beautiful glasses. Garnish with the mascarpone cream, passion fruit syrup, and espuma. Serve the dessert immediately.
