Ingredients

70 g Egg, egg yolk, fresh

1 piece Gelatin powder, unsweetened

250 g Cheese, cottage cheese, from skimmed milk

Steps

Place the puff pastry on a baking tray. Sprinkle it with powdered sugar so that it caramelizes nicely while baking in the oven. Bake for 6 minutes at 220°C, then for another 10 minutes at 190°C.

While the pastry is baking, prepare the mousse with cream cheese and white chocolate. Soak a sheet of gelatin in cold water. Whip the cream. Beat the egg yolks and sugar with a whisk over steam. When the mixture rises and turns a nice yellow color, add the melted chocolate and gelatin. Mix well. Mash the cream cheese with a fork and mix it into the egg mixture. Finally, fold the whipped cream into the mixture by hand. If the mixture is too runny, place it in the refrigerator for a while.

Take the baked puff pastry out of the oven; ideally, it should have risen by about a finger and a half. Cut it into 3 or 4 long strips with a sharp knife.

Put the mousse into a piping bag, making sure there is no air inside. Pipe a layer of mousse onto the first strip of puff pastry. Top with raspberries and cover with another layer of puff pastry. Repeat the process once more and finally cover with the top layer of puff pastry. Dust the top with powdered sugar.
