Millet Patties with Herbs
Depending on the size of the patties, they can be served as a side dish, appetizer, or main course. If serving as a main course, dont forget a large bowl of seasonal salad!

Ingredients

1 cup Millet, raw

3 pieces Egg, fresh

60 g Wheat flour, white, multi-purpose

3 pieces Shallot

0.5 bouquet Parsley, fresh

1 teaspoon Salt, table

2 pinch Spices, pepper, white

3 spoons Butter, unsalted

3 spoons Oil, olive
Steps

Drain the soaked millet and rinse it under running water. Transfer it to a pot and add three cups of water, seasoning with 1/2 teaspoon of salt. Place the pot on the stove and bring the contents to a boil. Once the water boils, reduce the temperature and simmer the millet porridge on low heat for about 15 to 20 minutes, allowing the millet to absorb all the liquid. Once cooked, remove from heat and let it cool slightly.

Peel and finely chop the shallots. Wash, shake dry, and finely chop the parsley. In a bowl, whisk the eggs and flour together using a hand whisk. Mix in the chopped shallots, parsley, and the cooled millet porridge. Season with pepper and salt to taste. Shape the mixture into patties of your desired size using your hands.

Heat a mixture of oil and butter in a pan. Place the prepared patties on the hot fat and cook until the bottom side turns golden brown. Carefully flip them with a spatula and cook until the other side is also golden brown.

Serve the cooked patties on plates and enjoy.
