Millet Porridge with Greek Yogurt and Caramelized Apples

Ingredients
Caramelized apples

30 g Butter, unsalted

2 piece Apple, fresh

1 spoon Juice, lemon

50 g Sugar, brown

0.5 teaspoons Spices, cinnamon, ground

6 spoon Millet, raw

0.5 l Milk, whole milk

0.25 teaspoons Spices, cinnamon, ground

350 g Yogurt, plain, from whole milk

Place the millet in a sieve and rinse it thoroughly with hot water. Once the water runs clear, drain the millet.

Transfer the rinsed millet to a pot and add milk, a pinch of salt, and a little cinnamon. Cook the porridge over medium heat until it boils, then simmer for about 10 minutes, stirring occasionally, until it softens completely. Add more liquid if needed. Remove the cooked porridge from the heat and let it cool slightly.

Meanwhile, prepare the caramelized apples. Wash, peel, and chop the apples into pieces. Melt butter in a small pan. Add the apples, lemon juice, sugar, and cinnamon. Cook over medium heat, stirring occasionally, until the apples caramelize and soften slightly.

Mix the partially cooled porridge with about 250 g of Greek yogurt. If desired, you can add a little honey, but it’s not necessary.

Prepare serving glasses and first add the porridge mixed with yogurt. Top the porridge with 1-2 tablespoons of yogurt. Finally, add the caramelized apples and sprinkle with coarsely chopped walnuts or hazelnuts. Serve immediately or store in the refrigerator until ready to use.
