Millet Porridge with Nuts and Lemon Cream
A tasty breakfast that will fill you up and provide the energy needed to start your (work) day. You can omit the lemon cream, but if you decide to make it, we recommend preparing it a day in advance.

0.5 cups Juice, lemon

2 spoons Koruzni škrob

Millet porridge

260 g Millet, raw

6 dl Water

6 dl Milk, whole milk

Lemon Cream: In a small bowl, mix lemon juice and cornstarch until smooth. Pour in boiling water and mix well to create a smooth mixture, which you then pour into a saucepan. Add sweetener, place on the stove, and slowly bring to a boil while stirring, allowing the mixture to thicken. Remove from heat and let it cool slightly, then mix in the egg yolks. Return to the stove and slowly heat while continuously stirring until the cream boils. Remove from heat and mix in the butter.

Pour the cream through a fine sieve into a bowl or a sterile jar for storage. Gently press a piece of plastic wrap onto the surface to prevent a "skin" from forming. Wait for the cream to cool to room temperature, then refrigerate it until it is completely cooled and set.

Millet Porridge: Rinse the millet thoroughly under warm water and drain. In a suitably sized saucepan, bring a mixture of milk and water to a boil, lightly salting it. Once the liquid boils, add the drained millet and cook it slowly over low heat for 15 to 20 minutes, stirring occasionally. If the liquid evaporates before the porridge is cooked, add a bit more water or milk. Sweeten the porridge to taste with your preferred sweetener.

Once the porridge is cooked, serve it in deep bowls or dishes. Top it with the lemon cream, garnish with nuts, dried or fresh fruit, and serve immediately.
