Million Dollar Soup
When we want to offer our family a quickly made, inexpensive, tasty, and visually appealing bowl of soup, Million Dollar Soup is an excellent choice. To prepare it, we only need carrots, eggs, semolina, and a soup base, which can also be water. If we involve the children in peeling the carrots, the soup will be even tastier.

Ingredients

1 spoon Butter, unsalted

300 g Carrot, fresh

2 spoons Semolina

1 l Soup base, chicken, cube

Steps

Peel, wash, and grate the carrots.

Melt the butter in a pot. Add the grated carrots and sauté them while stirring until they change color and become fragrant.

Add the semolina, stir briefly, and pour in the soup base or water. Season with salt and pepper to taste. Simmer the soup over moderate heat for about 15 minutes.

Beat the egg in a small bowl and slowly drizzle it into the soup while stirring. Cook everything together for another 2 minutes.

Garnish the prepared soup with chopped fresh parsley. Serve it in deep bowls or soup cups and enjoy.
