Mini Calzone with Mozzarella
Calzones are essentially pockets of pizza dough filled with any desired filling. The sauce is served separately.

Ingredients
- 1.5 spoons Oil, vegetable oil, canola

- 1 piece Egg, fresh

400 g Flour, Wheat, bread flour

20 g Yeast, dry

2 spoons Oil, olive

0.5 teaspoons Salt, table

2 dl Water

3 pieces Egg, fresh

300 g Cheese, feta

150 g Cheese, mozzarella
Steps

Prepare the dough according to the recipe for leavened pizza dough.

Drain the mozzarella and cut it into small cubes. In a bowl, mix crumbled fresh cow's cheese, mozzarella, and 3 eggs. The filling should be firm but not dry.

Divide the risen dough into 6 parts, flatten and stretch them on a lightly floured work surface into circles about 5 mm thick. Place the filling on half of each circle, then fold the dough over to form a crescent shape. Press the edges together firmly with your fingers.

Preheat the oven to 200 °C. Grease a low and large baking tray and arrange the prepared calzones on it. Beat the remaining egg and brush it over the calzones using a pastry brush. Bake them in the preheated oven for 20 minutes until they turn golden brown. Arrange the baked calzones on plates and serve with tomato sauce.
